Yam Porridge
Yam is an excellent energy food, it is rich in carbohydrate and is a staple food in most parts in Nigeria. It can be eaten boiled, pounded, fried or roasted but it’s sumptuous as porridge. This recipe has yam porridge served with Kale
Ingredients
- 1 medium size Yam tuber, cut into desired size
- 1/2 cup Crayfish, ground
- Pumpkin Leaves or spinach, as desired(optional)
- Chili Pepper, as desired
- 1 large Onion bulb, chopped
- 3/4 cup Palm Oil
- 300g Dried or Smoked Fish
- 500g Beef or Chicken
- 2 cups of Meat Stock
- 2 Seasoning cubes
- Salt to taste
- A handful of sliced red Bell Pepper (for garnishing)
- Kale (for garnishing)
Sauteed Kale
- Place a pan on heat
- Add a tbsp of palm oil to the pan
- Add onions, red bell pepper and a tbsp of rich homemade meat stock
- Add a handful of kale
- Stir until there is no liquid left
- Add salt to taste
- Water
Cooking the yam
- Peel the yam and wash properly
- Season the meat and cook till it soft
- Fry or grill the meat if necessary
- Cut the yam into yam cubes, scrape the sides of some of the yam to act as a thickener
- With the meat stock, cook the yam adding salt, palm oil, seasoning cubes, pepper and crayfish
- Add water to the pot until it is the same level with the yam
- Add the dried or smoked fish
- When the yam is soft,
- Taste for salt, add the pumpkin leaves or spinach, cook for another 5 minutes (if cooking with vegetables)
- Serve as desired
