Beans with Corn Pottage
This combination of beans and sweet corn is always very appealing and encouraging for people who think beans is boring. This recipe also has boiled plantain to complement the pottage
Ingredients
- 300g Beans
- 200g of Sweet Corn
- 1 bulb of Onions
- Scotch Bonnet Pepper to taste
- 2 Seasoning cubes
- 1 cup Palm Oil
- 1/2 cup Crayfish (optional)
- Salt to Taste
Directions
- Some people boil the beans for 10 minutes, drain out that water and rinse under running water, it is believed to reduce bloating after eating the beans. This is optional so it is up to you
- Wash the beans properly, add water to be double the quantity of the water
- Cook with all the onions for about 45mins
- Add the scotch bonnet pepper, seasoning cubes, crayfish and palm oil and cook for another 10 minutes
- Drain the sweet corn from the can and sprinkle over the beans
- Allow to cook for another 5mins
- Stir properly and add salt to taste
