Nkwobi

This choice dish is from the Eastern part of Nigeria and is served in many Nigerian restaurants. It is made with cow leg and the local aromatic spices. It is very delicious, spicy and can pass for an appetizer, main dish or a side.

Ingredients

  • 1kg Cow leg
  • 2 seasoning cubes
  • 1/2 cup palm oil
  • Chilli pepper to taste
  • Chopped utazi leaf(as desired)
  • 1 tsp ground ehuru seeds
  • 1/4 cup ground crayfish
  • 1/2tsp ground potash
  • 1/4 cup ugba (oil bean), sliced
  • Salt to taste

Directions

  • Season the cow tail properly and cook till it is soft and you have a rich stock,(it’s faster with a pressure cooker)
  • In a pot, make a paste with the ground potash using the palm oil
  • Place on heat and stir
  • Add the onions, pepper, seasoning cubes and crayfish
  • Pour in the cooked cow leg with little stock
  • Cook for about 5minutes
  • Add more stock if it is too dry
  • Add the ugba and the ground ehuru seeds
  • Lower the heat, taste for salt
  • Allow the flavour to blend for about a minute and serve
  • Nkwobi is usually served in a serving mortar
  • Garnish with chopped Utazi leaves and onions
