Oil Bean Sauce

This amazing Oil Bean Sauce recipe is simple and the dish is absolutely delicious. It is made from a local seed called ‘Ugba’ an is popular in eastern Nigeria

Ingredients

  • 5 cups of Oil Bean Seeds(Ugba), sliced
  • 200g Goat meat
  • 100g Kpomo
  • 3 cups of Chicken Stock
  • !/2 cup of Palm Oil
  • 1 Onion Bulb, sliced
  • 3 Chilli Peppers, pounded
  • 1 cube Seasoning Cube
  • 2 tbsp Corn Flour (optional)
  • Salt to taste

Directions

  • Season the goat meat, cook until it is soft
  • Pour the palm oil into a pot and place on heat
  • When it is almost bleached (after 30secs), put the onions into the oil
  • Add the pepper and seasoning cube and stir
  • Pour the the sliced oil bean seeds and stir fry for about 5mins
  • Add the meat stock and the goat meat, stir and cook for another 2mins
  • If the sauce is too watery, thicken with corn flour.
  • Add salt
