Vegetable Rice
Vegetable rice is a nutritious dish rich in carbohydrate, iron, proteins and vitamins. The amount of pumpkin leaves or spinach used it totally up to you. Though it is not very popular, this dish is very appetizing and is enjoyed by many looking for very traditional recipes
Ingredients
- 2 cups of Rice
- 4 cups Pumpkin Leaves/ Spinach, finely chopped
- 1/4 cup Palm Oil
- 1/2 cup of Crayfish, Ground
- Chilli Pepper to taste
- Salt to taste
- 2 Seasoning cubes
- 1 Onion bulb
- 200g Dried Fish
- 300g Meat or Goatmeat
- 1/2 cup Shrimps (optional)
- 3 cups Meat Stock
Directions
- Wash the meat, fish and vegetables and set aside
- Season and boil the meat till it is soft
- Fry or grill the meat (optional)
- Wash the rice with cold water.
- Parboil the rice for about 8-10mins and wash out the starch
- In a pot, put the rice and add 2 cups of water
- Pour in the broth and put on fire
- Put the Palm oil, chilli pepper, onions, salt and crayfish
- Cook for about 10mins
- Add the dried fish
- When the water starts drying up, add the shrimps and the pumpkin leaves or spinach
- Stir and allow to cook until the rice dries up
- Serve and garnish with the fried or grilled meat
